Abstract

Ginger (Zingiber officinale) has been a cornerstone in traditional medicine for centuries, particularly in Ayurvedic and Chinese practices, for its therapeutic benefits in alleviating cough, cold, and digestive issues. The bioactive compounds in ginger, such as gingerol and shogaol, contribute to its anti-inflammatory, antimicrobial, and carminative properties, making it an ideal ingredient for natural remedies. This study focuses on formulating and evaluating ginger-based candies for cough, cold, and digestive relief.

The formulation involves incorporating ginger extract or powder into a candy base, typically consisting of sugar, glucose, and pectin or gelatin. The process includes preparing ginger extract through infusion or decoction, mixing it with the candy base ingredients, heating to the desired consistency, and shaping into candies.

Evaluation parameters include physicochemical properties (pH, moisture content, sugar content), phytochemical analysis (HPLC identification of gingerol and shogaol), microbiological evaluation (total viable count, pathogen testing), sensory evaluation (taste, texture, aroma), and therapeutic evaluation (in vitro antimicrobial activity, in vivo studies for cough, cold, and digestive relief).

The ginger candies showed promising results, with significant antimicrobial activity and potential therapeutic benefits for cough, cold, and digestive issues. The study highlights the potential of ginger candies as a natural, palatable alternative to conventional medicines, improving patient compliance and leveraging ginger’s bioactive properties for health benefits.
